High-Altitude Cooking Adjustments

When cooking at high altitude, over 7,000 feet - or more aptly, ours at close to 9,000 feet - be sure to adjust your recipes for proper cooking. Here are some tips to help you do just that:

Cooking:
- Boiling water: takes longer - sometimes up to 10 minutes. Adding some salt will speed up the boiling process.
-All else might take just a bit longer to cook, so incorporate that into your timing. Patience!

Baking:
- General: Some people swear to increase the cooking temperature by 25 degrees.
- Cookies: Add the extra flour (usually 1/4 cup). Do not bake higher than 350 degrees.
- Baking Powder: Many people swear to reduce each baking powder teaspoon by 1/3.
- Baking Soda: Same as for baking powder
- Packaged Mixes: Always add 2 Tablespoons extra flour
- Yeast breads: Follow the recipe exactly and let the yeast proof really well. Add a bit more flour and let rise 10-15 minutes longer than normal.
